General:
The Scottish Chief's Tavern Brewery complex, built at the end of the 1980s, incorporates two of Geelong's most historic buildings: the former Scottish Chief's Hotel and the old bluestone malthouse of the Volum Brewery. The Volum Brewery, which became part of Carlton and United Breweries, closed in 1984, so the inclusion of a microbrewery in the redevelopment re-establishes on this site an activity that began here in the 1840s. Beer production in the new brewery commenced early in 1989.
