General:
Outback Brewery was set up in 2002 in the western Sydney suburb of Woodpark. It originally used equipment from the defunct Colonial Brewery, a brew-on-premises establishment elsewhere in Sydney. Beer was produced in small batches using seven individually gas-fired 60 litre brew kettles. The operation has now been scaled-up, however, by the installation of two 500 litre kettles. The brewery has also recently changed hands; the current owners are Benn Hart, Craig Walsh and Kelvin Shaw.
